Vegan Baked Apples

Ingredients
  

  • 2 large apples
  • 1/4 cup date paste - 4 medjool dates blended with 1/4 cup hot water
  • 1/2 cup rolled oats
  • 1 tbsp cinnamon

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cut the apples straight across the top, then carefully cut down in a circular motion to remove the core and seeds so that there's a large hollow space in each one.
  • In a small bowl mix the oats, date paste and cinnamon, then spoon an equal amount of the filling into each apple.
  • Place the apples on a parchment-lined baking sheet and bake for 30 minutes, or to your desired tenderness - feel free to add a bit more time if you'd like them softer, or subtract time if the apples aren't very big.
  • Let the apples cool for 15 minutes after baking and enjoy!
