Vegan Samoa Shake

Ingredients
  

Shake

  • 1 1/2 cups chickpeas - 1 can, drained and rinsed
  • 1/2 cup nondairy milk - I used unsweetened soy milk
  • 1 tbsp cocoa powder
  • 2 pitted medjool dates
  • 1 tbsp unsweetened shredded coconut, toasted
  • 10 ice cubes

Toppings

  • 1 tbsp unsweetened shredded coconut, toasted
  • 1 tsp vegan dark chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees and toast the coconut in the oven for 5-7 minutes, until golden and fragrant - watch it closely, it can burn quickly!
  • In a high speed blender, mix all the shake ingredients until totally smooth and creamy.
  • Top with more coconut and dark chocolate chips and enjoy!
