Vegan Single Serve Peanut Butter Banana Baked Oatmeal

Ingredients
  

  • 1/2 cup whole grain rolled oats
  • 1 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1/2 cup ripe banana, mashed
  • 1/2 cup nondairy milk - I used unsweetened almond milk
  • 1 tbsp natural, unsweetened peanut butter - only ingredients should be peanuts and salt

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats, flax, and cinnamon.
  • Add the mashed banana and nondairy milk and mix until everything is incorporated.
  • Bake the oats for 20 minutes.
  • Once they've slightly cooled, top with a drizzle of peanut butter and more sliced banana.
