Vegan Raw Granola

Servings 3 1/2 cups granola

Ingredients
  

  • 1 1/2 cups raw almonds
  • 1/2 cup raw walnuts
  • 1/4 cup ground flaxseed - you could also use whole seeds, but be sure to blend those before everything else so that they get broken down (in the photos I used whole seeds and didn't grind them first, which is why some are still intact!).
  • 1/4 cup hemp seeds
  • 12 pitted medjool dates

Instructions
 

  • In a food processor, pulse the almonds and walnuts for 15-30 seconds, just to get them broken down a bit.
  • Add the ground flax and hemp seeds, and pulse for another 30 seconds.
  • Add the pitted dates, and blend for 2-3 minutes, until everything is incorporated into a loose, crumbly, sticky dough.
  • Store the granola in a tupperware in the refrigerator.
