1largeorange sweet potato, peeled and chopped - about 3 cups chopped
2mediumcarrots, peeled and chopped - about 1/2 cup chopped
1/2cupnutritional yeast
1tbspgarlic powder
2tbspapple cider vinegar
3/4cupwater
Instructions
Cut the peeled sweet potato into small cubes, and cut the peeled carrot into small rounds.
Bring a pot of water to a boil and cook the sweet potatoes and carrots uncovered until tender, about 20 minutes.
Add the sweet potato, carrot, and all the remaining ingredients to a food processor and blend until totally smooth and creamy. Depending on the size of the sweet potato and carrots you use, you may want to add slightly more/less water to get a consistency you like, so you can start with 1/2 cup water and work your way up from there.
