Vegan Strawberry Banana Doughnuts

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/2 cup freeze dried strawberries
  • 1 cup ripe mashed banana - I used 3 medium bananas and mashed with a fork, then measured out 1 cup to add to the batter
  • 1/2 cup nondairy milk - I use unsweetened almond milk for neutral flavor, but any nondairy milk should work

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the oats and freeze dried strawberries to a blender and blend until mostly broken down to a powdery consistency, then add to a large mixing bowl.
  • Add the mashed banana and nondairy milk then mix everything together into a smooth batter.
  • Portion about 1/4 cup of the batter into the 6 spaces in the doughnut pan. If you have some batter leftover, so just evenly portion it between the 6 doughnuts.
  • Bake the doughnuts for 20 minutes, then let them cool in the pan for 20 minutes before carefully removing.
  • Store leftovers in the refrigerator.
