Strawberry + banana is such a dreamy combo that for me is totally synonymous with sunshine + summer. They’re a great team in smoothies and overnight oats, so I figured they’d be legit in doughnuts, too, and I wasn’t wrong.

Let’s chat about vegan strawberry banana doughnuts! These are almost too easy and so perfect for a fun breakfast on a warm summer morning.

  • Rolled oats: you’ll blend the oats to flour consistency, which will hold the doughnuts together. Because it’s the only grain in the recipe, the oat flour will give the doughnuts a more dense texture – they’re not light and airy, but hearty and satisfying.
  • Freeze dried strawberries: you’ll blend the freeze dried strawberries along with the oats to powder consistency. These give the doughnuts a punch of sweet strawberry flavor without adding too much liquid to the batter like fresh berries would.
  • Bananas: mashed ripe and spotty bananas are the main sweetener for the doughnuts, and they also give a softer texture.
  • Nondairy milk: milk brings the doughnut batter together. I used unsweetened almond milk, but any nondairy milk should work.

  • Measure the rolled oats before blending into flour. I always list the amount of oats used BEFORE they’re blended for flour. So in this case, you’ll measure out 1 1/2 cups of whole, rolled oats, then put that 1 1/2 cups into your blender to make flour.
  • Same goes for the freeze dried strawberries! You’ll measure out 1/2 cup of freeze dried berries and add that to the blender with the oats to break them down.
  • Use ripe bananas. The bananas need to be super ripe, brown and spotty for the best flavor + sweetness.
  • Portion any leftover batter between the 6 doughnuts. Use a 1/4 cup measure to portion the batter into the 6 spaces in the doughnut pan. You may have some batter leftover, so just evenly portion it between the 6 doughnuts.
  • Use a nonstick pan. I always use a silicone, nonstick pan so that the doughnuts don’t stick after baking.
  • Add a glaze or some toppings if you’re feeling fancy. These doughnuts are great on their own, but I love mixing a bit of unsweetened vegan yogurt with some more freeze dried strawberries for on top!

Vegan Strawberry Banana Doughnuts

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/2 cup freeze dried strawberries
  • 1 cup ripe mashed banana – I used 3 medium bananas and mashed with a fork, then measured out 1 cup to add to the batter
  • 1/2 cup nondairy milk – I use unsweetened almond milk for neutral flavor, but any nondairy milk should work

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the oats and freeze dried strawberries to a blender and blend until mostly broken down to a powdery consistency, then add to a large mixing bowl.
  • Add the mashed banana and nondairy milk then mix everything together into a smooth batter.
  • Portion about 1/4 cup of the batter into the 6 spaces in the doughnut pan. If you have some batter leftover, so just evenly portion it between the 6 doughnuts.
  • Bake the doughnuts for 20 minutes, then let them cool in the pan for 20 minutes before carefully removing.
  • Store leftovers in the refrigerator.

    1. Hi Lauren, thank you! I just mixed some unsweetened vegan yogurt with some more crushed up freeze dried strawberries, then you can dip them straight in that bowl or drizzle it on top.
