So, I’m normally a smoothie girl. But this vegan blueberry muffin smoothie bowl may have me fully converted to team smoothie BOWL.

This bowl of course has all the creamy, dreamy, classic smoothie bowl perks. But on top of that, it also has all the flavors of the beloved blueberry muffin. Again, normally I’m all about chocolate, but there’s something about a blueberry muffin that just hits the spot. And even better if it’s in smoothie bowl form, right?

Ingredients for a vegan blueberry muffin smoothie bowl

  • Frozen banana: frozen banana gives the smoothie bowl its creamy texture as well as sweetness.
  • Frozen blueberries: frozen blueberries provide all the sweet blueberry flavor and lots of antioxidants.
  • Protein powder: protein powder gives the smoothie bowl a great thick texture, and makes it more satiating. I always use Complement protein because it’s the best quality, super simple and clean vegan protein you’ll find, but any vegan protein should work (though it may slightly change the texture/flavor).
  • Water: a little liquid helps everything blend together.
  • Raw granola: you can add whatever you like on top, but the one essential topping for this bowl is a generous sprinkle of raw vegan granola. This really gives that chewy, sweet, streusel-like feel, similar to a blueberry muffin top.

Tips for making a vegan blueberry muffin smoothie bowl

  • Freeze your bananas when they’re super ripe. Always wait to freeze bananas until they’re super ripe and spotty. This is when they have the most sweetness and banana flavor.
  • Add as little liquid as possible. I start with just 1/4 cup of water, then add little by little just to help the blender get things going. The less liquid you add, the thicker and more ice cream-like it will be.

Ingredients
  

  • 1 frozen banana
  • 1 cup frozen blueberries
  • 1 tbsp flaxseeds

  • 1/2-1 cup water – I like to add as little liquid as possible for as thick of a smoothie bowl as possible, so feel free to add more/less depending on your blender and the texture you want.
  • 1/4 cup vegan raw granola
  • Any additional toppings of your choice – fresh fruit, nuts/seeds, nut butter, etc.

Instructions
 

  • Add the frozen banana, frozen blueberries flaxseeds, protein powder, and water to a high speed blender and blend until totally smooth and creamy.
  • Pour the smoothie into a bowl and top with raw granola and anything else you'd like, then enjoy fresh!
