A few weeks ago we had these dreamy baked carrot cake oats, and now that we’re well into April, my brain is in total spring mode.

So, bring on allllll the smoothies! Starting with this vegan carrot cake smoothie, which is full of the classic, springtime, carrot cake flavors. It’s really simple and quick, full of healthy ingredients, and the best way to start a spring day.

Vegan Carrot Cake Smoothie

Ingredients for a vegan carrot cake smoothie

  • Frozen banana: a ripe, frozen banana gives the smoothie a bit of sweetness and super creamy texture.
  • Carrot: carrot is of course an essential for a carrot cake smoothie. You’ll need two large carrots, which you’ll chop into smaller pieces so that your blender can get it totally incorporated – I have a Vitamix, so if you have a less powerful blender you may need to chop it more finely.
  • Complement protein powder: protein helps make the smoothie more satisfying and gives a thick texture. You can use a different vegan powder, but because Complement is totally unflavored, a different protein may change the flavor slightly.
  • Ground flaxseed: I love adding flax to smoothies because it’s super nutrient dense and a great source of omega 3s.
  • Cinnamon: just a bit of cinnamon complements the sweet carrot flavor.
  • Nondairy milk: a bit of milk helps bring the smoothie together. I use unsweetened almond milk for a neutral flavor, but any nondairy milk should work.

Tips for making a vegan carrot cake smoothie

  • Make sure you freeze the banana when it’s VERY ripe. Because it’s the only ingredient sweetening the smoothie, you want to freeze the banana when it’s super ripe and spotty.
  • Feel free to add a bit more/less liquid to get a texture you like. If you like a thinner, very drinkable smoothie, you may want a bit more milk, and if you like it super thick (or even a smoothie bowl), add less.

Ingredients
  

  • 1 frozen banana
  • 2 large carrots, roughly chopped

  • 1 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 1/2 cups nondairy milk – I used unsweetened almond milk

Instructions
 

  • Add all the ingredients to a high speed blender and blend until totally smooth.
