After this banana chocolate chip version, I’ve been on a baked oatmeal kick. It’s just so simple, feels a little more cozy and indulgent than overnight or chilled oats, and the single serve portion is ideal when I don’t want a big batch of anything.

This vegan single serve carrot cake baked oatmeal is perfect for a chilly morning, and the flavors really just hit the spot for spring.

Ingredients for vegan single serve carrot cake baked oatmeal

  • Rolled oats: I used old fashioned rolled oats because they have great chewy texture.
  • Ground flaxseed: flax provides super healthy omega-3 fats and helps hold this oatmeal together.
  • Date sugar: date sugar gives the baked oatmeal natural sweetness from fruit. I have only tried this recipe with date sugar, but stevia or coconut sugar should also work.
  • Cinnamon: just a little bit of spice goes so well with the carrot flavor.
  • Carrots: make sure to chop the carrot into super fine, small pieces so you don’t get any really big chunks in the baked oatmeal. I like to chop them from whole, rather than buying pre-shredded bags, which tend to be a lot more dry.
  • Nondairy milk: you’ll use a bit of milk to bring the oatmeal batter together before it goes into the oven. I use unsweetened almond milk for neutral flavor, but any nondairy milk should work.

Ingredients
  

  • 1/2 cup rolled oats
  • 1 tbsp ground flaxseed
  • 1 tbsp date sugar, stevia, or coconut sugar
  • 1 tsp cinnamon
  • 1/2 cup finely diced carrot
  • 3/4 cup nondairy milk – I used unsweetened almond milk

Instructions
 

  • Preheat the oven to 350 degrees.
  • In an oven safe bowl, mix the oats, flax, date sugar, and cinnamon.
  • Add the chopped carrot and nondairy and mix until everything is incorporated.
  • Bake the oats for 30 minutes.
  • Once they've cooled, top with whatever you like and enjoy.
